Maria Trabocchi Makes a Name in DC with Fiola Mare

A Washington, DC eatery is giving gastronomes new talking points. Fiola Mare, located on the Georgetown waterfront, is not your usual restaurant, thanks to its culinary delights paired with DC hospitality and the powerful culinary couple behind it. The restaurant brings the Italian and the Mediterranean seaside dining experience of elegant simplicity without sacrificing flavor, color and texture. The restaurant is run by Maria Trabocchi along with her husband Mr. Fabio Trabocchi, who serves as the master chef.

In spite of their humble immigrant backgrounds, the couple shares a deep rooted belief in hard work and traditional upright upbringing, a recipe that has helped them succeed in the highly competitive US restaurant market. According to an excerpt about the restaurant published in the Washington Post, the couple first met at the now defunct Milanese restaurant, Bice in 1994. Maria, the daughter of a Spanish diplomat was working for a young chef from Italy and barely spoke any English. Fabio was a son of a peasant farmer. The couple married in 2000 and established Fiola soon after, on the same spot where Bice stood.

It took a while before customers welcomed the idea of Fiola. Thanks to the tireless efforts of chef Fabio and his wife, who is now the face of the restaurant, the restaurant is frequented by high profiled politicians like UAE Ambassador Yousef Al Otaiba ( and celebrities like Alicia Keys. Fiola Mare offers a delightful menu made from the freshest, every day and seasonal ingredients. The menu covers brunch, lunch, dinner among other offerings such as private dining and full bar. Some of the popular lunch offerings here, include; Bigoli all’ Anatra, which includes duck ragu and parmigiana reggiano foie gras emulsion and the Venetian Style Seafood Crudo, which features assorted fish and shellfish.

On the grilled section there is wild calamari, ahi tuna, sea scallops and swordfish served with lemon, salva verde and virgin olive oil. The cocktail includes a selection of Bellagio and Riviera cocktails. The popular Bellagio cocktails include vodka, proseco, cocchi rosa and elderflower.
